To cook quinoa:
Heat 1 teaspoon of oil or butter in a pan. Add 1 cup of uncooked Quinoa to the oil to lightly toast the grains. Add 2 cups of water, ½ teaspoon of salt and bring to a boil. Lower heat to simmer for 15 minutes, covered. Yields 2 cups
- 1/2 cup raspberries or strawberries
- 1/2 cup blueberries
- 1 cup organic yoghurt or coconut yoghurt
Using two glass jars or bowls, layer the berries and yoghurt by adding berries to the bottom, 1/4 cup of yoghurt, more berries and top with another 1/4 cup of yoghurt. Top with a few more berries.
Layer optional ingredients to the parfait such as shredded coconut, cacao nibs or crunchy granola.

I was craving sushi, but am on a cleanse right now and thought I'd like to substitute all the white rice for something else..... so what better ingredient to use than quinoa! Sure it's not as sticky as sushi rice, but it stayed together well and tasted delicious!
I've used tricolour quinoa in this recipe just because it adds a little colour to the mix, but you could use white or red. Makes 4 six-inch sushi rolls. Fillings listed will make 1 roll each.
